Saité Raicilla

Saité Raicilla is an artisanal agave spirit from the western highlands of Jalisco, distilled from wild maximiliana agave harvested in the volcanic soils surrounding the towns of Cabo Corrientes and Mascota. Unlike mezcal produced in Oaxaca or Guerrero, raicilla is Jalisco's ancestral agave distillate, a category legally distinct from both mezcal and tequila, with production methods and terroir that yield a brighter, more floral character. The use of maximiliana — a wild species that takes fifteen to twenty years to mature — gives Saité an aromatic complexity and herbal intensity that sets it apart from cultivated agave expressions available in Chicago. The production follows traditional palenque methods passed down through generations of tabernero families in the Jalisco sierra. Wild maximiliana piñas are roasted in earthen pit ovens, crushed by hand or with tahona, and fermented in open wooden tinas using ambient wild yeasts from the surrounding forest. Distillation takes place in small copper pot stills, preserving the vegetal brightness and mineral backbone characteristic of high-altitude maximiliana. Each batch is small, reflecting the limited availability of wild agave and the slow, hands-on process that defines raicilla craftsmanship. On the palate, Saité Raicilla opens with notes of white flowers, fresh grass, and green peppercorn, followed by earthy undertones of wet stone and forest floor. The clean, herbaceous finish carries hints of citrus peel and mint, with a gentle smokiness that never overpowers the agave's natural brightness. Serve this neat in a veladora or copita to appreciate the full aromatic range, or pair it with ceviche, grilled white fish, or a simple plate of sliced jícama with lime and sal de gusano.
