Viva Mexico Blanco is an unaged tequila from Jalisco that stands out for its traditional tahona-crushed agave and copper pot distillation. The tahona wheel, a centuries-old volcanic stone roller, crushes the cooked agave more gently than industrial shredders, yielding a fuller, more textured juice that carries more of the plant's natural character into the final spirit. This small-batch approach keeps production hands-on and rooted in the methods that defined tequila before mechanization, delivering a blanco that tastes distinctly of agave rather than generic alcohol. The producer sources agave from the highlands and lowlands of Jalisco, blending terroir to balance the floral sweetness of highland fruit with the earthy minerality of lowland agave. After tahona crushing, the juice ferments in open wooden tanks, inviting wild yeast and ambient flora into the process, which adds complexity and a subtle funk that closed-tank fermentation suppresses. The spirit is then distilled twice in traditional copper pot stills, which preserve congeners and aromatic compounds that stainless steel strips away. The result is a blanco that reflects both the raw material and the method, with nothing added after distillation to mask or sweeten the agave's natural profile. On the palate, Viva Mexico Blanco delivers bright citrus and cracked black pepper notes up front, followed by a clean mineral finish that echoes the volcanic soils of Jalisco. The tahona process shows up as a rounder, almost creamy mouthfeel despite the lack of aging, and the copper pot distillation leaves a lingering herbal note that industrial column stills would erase.
