The Camarena family grows estate Blue Weber agave in the red volcanic soil of the Los Altos highlands, where cooler nights and higher elevation yield fruit with more structure and spice than lowland agaves. The piñas are slow-roasted in traditional stone ovens, then crushed and fermented with wild yeasts before double distillation in copper pot stills. The rainwater distillation is not a gimmick—it's softer than well water, allowing the agave's natural pepper, butter, and subtle smoke to come through without mineral interference during the cut.
