Arette has been distilling estate-grown Tequila Valley agave at 100% for over three decades, cooking the piñas in traditional stone and brick ovens before crushing them with a roller mill. Fermentation takes place in cement tanks under open air, and the agave juice is distilled twice in stainless pot stills fitted with copper coils using deep well water. The producer's commitment to excluding the volatile heads and tails from the final distillate means each batch prioritizes smoothness and definition over volume, a technique that sets the Artesanal line apart in a category where many reintroduce those fractions to stretch yield. The añejo presents a pale amber brown in the glass, with citrus and exotic fruit on the nose layered over hints of dried grass.
