Arette Artesanal Suave Añejo Tequila is made in small batches at NOM 1109 in Jalisco's Tequila Valley using only the heart of the distillate — a deliberate cut that excludes heads and tails from re-entering the process. Arette ages this expression for a minimum of twenty months in American oak barrels, and the result is an añejo that shows restraint and complexity in equal measure. Estate-grown Tequilana Weber agave from the lowlands provides the foundation for what has been a consistent house style in Lincoln Park for years. Arette has been distilling estate-grown Tequila Valley agave at 100% for over three decades, cooking the piñas in traditional stone and brick ovens before crushing them with a roller mill. Fermentation takes place in cement tanks under open air, and the agave juice is distilled twice in stainless pot stills fitted with copper coils using deep well water. The producer's commitment to excluding the volatile heads and tails from the final distillate means each batch prioritizes smoothness and definition over volume, a technique that sets the Artesanal line apart in a category where many reintroduce those fractions to stretch yield. The añejo presents a pale amber brown in the glass, with citrus and exotic fruit on the nose layered over hints of dried grass. On the palate, almonds, walnuts, and vanilla emerge, leading to a long finish marked by black pepper and oak tannin. This is a bottle to drink neat after dinner or paired with grilled short rib, mole negro, or aged manchego — the wood influence is present but never dominates the agave. The elegance here rewards slow sipping, and the complexity makes it one of the more food-friendly añejos in the Chicago market.
