This is a one-time-only set, and it's built around a bottle that doesn't exist anywhere else: Cascahuín's 55-25 Anniversary Añejo, released to mark the distillery's 70th year of production. Cascahuín has been making tequila in El Arenal since the 1950s, run across generations by the Camarena family (yes, that Camarena lineage — though Cascahuín has carved its own identity distinct from the bigger commercial names sharing the surname). Working out of NOM 1123, they've built a reputation among agave-forward drinkers for small-batch, tahona-informed production and a refusal to cut corners on cooking or fermentation. The 55-25 Añejo is a blend: 90% aged 12 months in ex-Sherry casks, 10% pulled from a four-year añejo reserve, bottled at 44% ABV. The sherry influence shows up as dried fruit and baking spice layered over the cooked-agave backbone, with the older añejo component adding depth and a longer, warmer finish than you'd expect from a mostly one-year-old blend. The anniversary bottle anchors a seven-piece collection that functions as a crash course in Cascahuín's range and in the broader lowland Jalisco style — Tequila Blanco and 48 Plata showing the house's clean, agave-driven baseline, a Tahona Blanco made the slow way (stone wheel, open fermentation), plus Aguasol's Blanco and Reposado and a Lágrimas del Valle La Sabina Plata rounding things out with a different NOM's take on the category side by side. Drink the 55-25 slow, in a tulip glass, no mixer required — it's built for sipping, not margaritas. It pairs well with aged cheeses, dark chocolate, or anything with char: grilled meats, roasted poblanos, carne asada.
