Jalisco Lowlands (Los Valles)

Los Valles — the lowland tequila region west of Guadalajara, around the town of Tequila itself, Amatitán, and El Arenal. Hotter days, clay-rich volcanic soils, savory-mineral agave with white-pepper backbone. The lowland producers tend to lean traditional: brick ovens, tahona crushing, copper pot stills, no additives. Distinct from highland Los Altos in every way that matters.
