2019 Domaine Jean-Marc Pavelot Corton Grand Cru Blanc

The Pavelot family has made wine in Savigny-les-Beaune for at least fifteen documented generations, placing them among the longest-established dynasties in the Côte de Beaune. Jean-Marc and his son Hugues run the domaine today across thirteen hectares that span village wines, five premier crus, and a small holding in the Grand Cru belt of Corton. The Corton Blanc is the rarest wine in the portfolio and among the most extraordinary values in white Burgundy: the parcel measures just 0.09 hectares, a steep southwest-facing sliver of shallow yellow, ochre, and brown marl soil planted to Chardonnay vines in the 1950s. Production averages only 25 cases per year. After direct pressing and cold settling, the wine undergoes six to eight weeks of alcoholic fermentation in barrel and demi-muid using native yeasts, followed by eighteen months of aging in French oak, half of which is new. It is racked, blended in tank, and bottled with light filtration. The old vines and the site's concentrated, marl-rich soils consistently produce small, intensely flavored grapes that translate directly into the wine's weight and precision. The 2019 vintage in Burgundy delivered generous, ripe fruit with enough natural acidity to maintain freshness and structure. In the glass, the Corton Blanc opens with aromas of apple, pear, apricot, lemon confit, and fresh almond, with the chalky, stony undertone of the hillside running quietly beneath. On the palate it is full-bodied and layered, with a fine line of acidity, a honeyed mid-palate texture, and a long, mineral-driven finish. The new oak is present but well absorbed by the depth of fruit, and the wine has the structure to develop gracefully for another decade or more. This is a bottle to open with care and attention. It is one of the rarest and most singular expressions of the Hill of Corton, and a reminder of what old vines and a great site can produce in the hands of a family that has spent fifteen generations learning how to listen to the land.
