The Pavelot family has made wine in Savigny-les-Beaune for at least fifteen documented generations, placing them among the longest-established dynasties in the Côte de Beaune. Jean-Marc and his son Hugues run the domaine today across thirteen hectares that span village wines, five premier crus, and a rare, precious holding at the very top of the Hill of Corton. That holding is the Corton Blanc, and it is unlike anything else in the portfolio. The parcel measures just 0.09 hectares, a steep southwest-facing sliver of ground so narrow it is easy to imagine missing it entirely on a walk up the hill. The soils are shallow and dramatic: layers of yellow, ochre, and brown marl that have been coaxing Chardonnay vines to extraordinary effort since the 1950s. Only 25 cases are produced in a typical year, making this one of the most quietly elusive bottles in all of white Burgundy. After direct pressing and cold settling, the wine ferments slowly over six to eight weeks in barrel and demi-muid with native yeasts, then rests for eighteen months in French oak, half of it new. The old vines and the marl's mineral concentration produce grapes of unusual intensity, small and deeply flavored, and the wine that emerges carries all of that weight with remarkable composure. The 2019 vintage was generous across Burgundy, warm enough to build richness without sacrificing the acidity that gives great white Burgundy its spine. In the glass, the Corton Blanc opens with aromas of apple, pear, apricot, lemon confit, and fresh almond, with the chalky, stony breath of the hillside rising quietly beneath. The palate is full-bodied and layered, with a honeyed mid-palate texture anchored by a fine line of acidity and a long, mineral-driven finish that seems to pull you back toward the hill itself. The oak is present but absorbed entirely by the depth of fruit, leaving nothing in its wake but precision and length.
