Domaine Jean-Marc Pavelot's 2019 Corton Grand Cru Blanc is one of the most quietly elusive bottlings in white Burgundy, a wine produced from just 0.09 hectares of vines perched on the steep southwest-facing slopes of the Hill of Corton. The parcel is planted entirely to Chardonnay rooted in the 1950s, grown in shallow layers of yellow, ochre, and brown marl that force the vines into deep struggle and yield grapes of unusual concentration. Only 25 cases are made in a typical vintage, and the 2019 vintage combines the warm generosity of the growing season with the acid spine that defines great white Burgundy. The Pavelot family has made wine in Savigny-les-Beaune for at least fifteen documented generations, placing them among the oldest winemaking dynasties in the Côte de Beaune. Today Jean-Marc and his son Hugues farm thirteen hectares across village-level parcels, five premier crus, and this rare sliver at the summit of Corton. After direct pressing and cold settling, the Corton Blanc ferments slowly over six to eight weeks in barrel and demi-muid with native yeasts, then rests for eighteen months in French oak, half of it new. The old vines and the mineral concentration of the marl produce small, intensely flavored grapes, and the resulting wine carries that weight with remarkable composure. The 2019 opens with aromas of apple, pear, apricot, lemon confit, and fresh almond, underscored by the chalky, stony breath of the hillside itself. The palate is full-bodied and layered, with a honeyed mid-palate texture anchored by fine acidity and a long, mineral-driven finish that seems to pull you back toward the hill. The oak is present but entirely absorbed by the depth of fruit, leaving nothing in its wake but precision and length.
