Single-cask rum named for the Árbol de Pipe — a deciduous coral tree (Colorín / El Pito / Zompantle) whose scarlet flowers bloom late in the dry season and feed hummingbirds along the Santa María Tlalixtac ↔ San Juan Bautista Cuicatlán route. Java-varietal cane juice, ambient-yeast pine-tank ferment, Krassel-still distillation. A 4-year-old Krassel-still rum aged an additional 35 months in a new French oak cask and finished 13 months in a Hungarian oak ex-red-wine cask. Nose: cotton candy, orange creamsicle, grated nutmeg, spearmint, pine, a touch of must. Palate: silky attack with sandalwood, orange oil, graham crackers, allspice, raisins, raspberries.
