Four brothers, one diesel-fired still their great-grandfather welded together in the 1930s, and a blending philosophy that treats each batch like a chapter in an ongoing story — that's Alambique Serrano in a nutshell, and Blend #4 is one of the more layered chapters yet. The Krassel Peralta family has been distilling in Oaxaca's Cañada region since Max Krassel settled there in 1917, and today Isidoro, Rommel, William, and Axel run the operation across four bodegas, working organic high-altitude Java cane with zero shortcuts. Vida Nativa Blend #4, nicknamed "Mariposa 88" after the butterfly spotted along the Río Blanco and feasting on fallen fruit in the Cañada, marries two distinct production paths. One lot runs through both the pot stills and the vintage Krassel column still, aged three years in new French oak before an 11-month finish in ex-tequila casks. The other is pure Krassel-still spirit, aged 38 months in ex-bourbon and finished 10 months in a cask that previously held Merlot. Both start from the same place: organic Java cane juice, crushed and fermented on ambient yeast in open pine tanks, nothing added or taken away before bottling at cask strength — 56.1% ABV, no water, no sugar, no color. What lands in the glass is genuinely unusual for the category. The nose opens with lavender and rosita de cacao, drifting into buttered popcorn and something close to Pan de Muertos — that warm, anise-kissed bread character. On the palate, orange compote and brioche give way to red currant and lavender again, with a weird, wonderful streak of laffy taffy and a late flicker of Szechuan peppercorn heat. This is a sipping rum, full stop — pour it neat in a tulip glass, maybe with a single large cube if the cask strength needs taming, and let it sit alongside dark chocolate, aged Oaxacan cheese, or a spiced mole negro. Only 571 bottles exist worldwide, imported by PM Spirits, and once they're gone this particular blend doesn't come back.
