The Rums of Mexico 'Caldo' Rum Orlando Vásquez – Veracruz, Mexico 700 ml | 52.3% ABV (104.6 Proof) Caldo — Spanish for “broth” or “juice” — is a raw, unaged Mexican aguardiente distilled from fresh-pressed sugarcane juice. Produced by second-generation cane farmer and first-generation distiller Orlando Vásquez in Veracruz, this spirit uses two naturally high-yielding sugarcane varieties. Orlando ferments and distills the fresh caldo in a simple four-plate continuous copper still heated by firewood. The result is bottled without additives or filtration, preserving its bold, farm-to-bottle character. This is traditional Mexican cane spirit at its most authentic: earthy, smoky, and surprisingly complex. Tasting Notes Nose: Vegetal and earthy with lime, green apple, campfire smoke, and black pepper. Palate: Thick and oily with brine, lime pith, truffle, charcoal smoke, black pepper, and wild blackberry jam. Finish: Long and lingering, echoing soursop, lime, earth, smoke, and dark berry fruit. Caldo delivers a savory, funky punch balanced by bright fruit and persistent smoke. It’s a standout for rum enthusiasts who appreciate terroir-driven, high-proof spirits with real personality. Excellent neat or over a large ice cube. Also shines in bold, adventurous cocktails where its unique profile can shine through. A true hidden gem from one of Mexico’s most exciting small producers.
