Master Distiller Ricardo Gamarra slow-cooks the piñas harvested from volcanic highland soil, then rests the tequila for nine months in these prepared 11-year-vintage oak barrels, rolling them throughout the aging period to keep the spirit in constant contact with the sweetened oak. Only 300 bottles were allocated nationwide, making this one of the more limited reposado expressions available in Chicago. AsomBroso — Spanish for "astonishing" — is a family-owned distillery in Jalisco committed to preserving historical production methods while innovating within the traditional framework. Ricardo Gamarra oversees every stage, from agave cultivation in the mineral-rich volcanic soils of the highlands to the slow-cooking process that coaxes natural sweetness from the piñas before distillation. The barrel-rolling technique during the nine-month rest is unusual in the reposado category and results in a more thorough integration of oak character without over-extraction. The staves are coated with caramelized agave before the spirit is introduced, a step that builds sweetness into the wood itself rather than relying solely on residual sugars in the distillate.
