A blend of everything and the kitchen sink, this is their tip-of-the-hat to the field blends of yore, albeit a bit more structured and wilder – thus instead of “Gemischter Satz,” we have “Wilder Satz.” Ultra-light and fresh, aromatic but not floral, normally with a bit of skin-contact and grip – a very light-styled orange wine. The “Wildersatz,” or wild things, is the leanest, meanest, saltiest orange wine in the category – featherweight yet razor sharp. Mostly Muller Thurgau with dozens of other varieties with various macerations–a maximum of two weeks but most is much less–and a steeping of Riesling skins in a “tea bag” that creates a secondary fermentation in the tank.
