The extended aging period pushes this añejo into the upper range of the category, where the wood influence becomes pronounced but the distillate still asserts itself. Campo Azul's production emphasizes time over intervention, letting the barrel work do the heavy lifting while the agave slowly oxidizes into something richer and more complex than a standard 12-month expression. The distillery sources mature blue Weber agave from the highlands and lowlands of Jalisco, blending terroir characteristics to balance the vegetal minerality of the valley floor with the floral sweetness typical of higher elevations. The piñas are slow-roasted in traditional masonry ovens, then fermented with proprietary yeast strains and distilled in copper pot stills. After distillation, the tequila enters charred American oak barrels for a year and a half, during which the spirit picks up tannins, lactones, and vanillin compounds that soften the raw agave heat and introduce layers of dried fruit and spice. The longer maturation also means greater evaporation, concentrating flavors and yielding a spirit with viscosity and weight.
