Dolin Dry Vermouth

$20.00
From the Alpine town of Chambéry in Savoie, France, the only town in the world to hold its own appellation specifically for vermouth, Dolin has been crafting its aromatized wines since 1821, and the Dry remains one of the most respected and widely used vermouths among bartenders worldwide. Made from a base of local white wine infused with a blend of Alpine herbs, botanicals and spices, Dolin Dry is a study in restraint and elegance compared to many of its more assertive, herbaceous counterparts. Where French dry vermouth is often associated with intense bitterness and bracing dryness, Dolin takes a gentler approach, true to the delicate character of Chambéry's historic style. In the glass it is pale, almost straw-coloured, hinting at its lighter touch. The nose is fresh and aromatic, with delicate notes of chamomile, white flowers and citrus peel, layered with subtle herbal and slightly bitter undertones. There's a quiet complexity here rather than overt intensity. On the palate it is crisp and dry, with bright acidity and a light, clean herbal character. Notes of green apple, lemon zest and dried herbs unfold gently, finishing with a soft, gently bitter, refreshing close. It never overwhelms, making it exceptionally versatile and food-friendly. This versatility is exactly why Dolin Dry has become a go-to for classic and modern cocktails alike, prized for its ability to support rather than dominate, allowing the gin or other base spirit to shine through.
