The Etiqueta Ambar designation signals extended lees aging that builds texture without sacrificing the variety's hallmark acidity, a technique Granbazan has refined since replanting the denomination's first albarino vines in the early 1980s. This is albarino with structure, built for the table rather than the aperitif hour alone. Granbazan farms thirty-five hectares of albarino on granitic slopes in the Val do Salnes, the coolest and most maritime of Rias Baixas's five subzones. The estate bottles several tiers; the Ambar undergoes several months of sur lie aging in stainless steel, allowing autolytic complexity to emerge while preserving the aromatics that make Galician whites compelling. Fermentation is cool and controlled, protecting the delicate floral esters that evaporate under thermal stress. The resulting wine balances weight and tension, a product of both terroir and intentional winemaking restraint. The glass offers limpid green-tinged yellow wine with aromas of fresh honeydew, tangerine, and white flowers layered over a mineral base.
