The production follows traditional highland methods with modern precision: mature agave is cooked for 48 hours in stone brick ovens and cooled for an additional 24 hours, then crushed in a four-part roller mill extraction using deep well water. Open-air lactic fermentation happens in 10,000-liter stainless steel tanks with native yeast and agave fibers left in the ferment, a technique that builds texture and vegetal depth. The liquid is twice distilled in copper pot stills and oxygenated for balance before spending three weeks in Four Roses Bourbon American Oak barrels, a short rest that imparts wood tannin and baking spice without masking the agave.
