Raventós "De Nit" Reserva Rosado is a singular expression of Catalonia's Conca del Riu Anoia, the appellation Pepe Raventós founded in 2012 when he left the broader Cava DO to focus on his estate's calcareous fossil-rich soils. The wine is built on Macabeu and Parellada, the traditional white grapes of the region, with a small percentage of Monastrell for color and structure, resulting in a barely-there peach-pink hue and a mineral-driven profile that sets it apart from the fruit-forward rosés most Champagne drinkers expect. Pepe Raventós farms organically and biodynamically on soils dense with marine fossils, a legacy of the ancient seabed that defines the Penedès plateau. The extended tirage aging required for Reserva status gives the wine texture and complexity without weight, while the native-yeast fermentation preserves the lively acidity and tension that make the estate's sparkling wines so distinctive. The Conca del Riu Anoia designation is Raventós's answer to the industrialization of Cava, a return to single-estate, traditional-method wines that speak clearly of place rather than brand.
