It's a textbook lowland tequila made the way Los Valles producers worked before steel autoclaves and diffusers became the industry norm. The Cascahuín distillery has been operated by the Rosales family since 1904, making it one of the oldest continuously operating distilleries in Jalisco. El Arenal sits in the lowland valley west of Guadalajara where volcanic clay soils and warmer days produce agave with deeper earthy minerality and savory backbone — distinct from the floral, fruit-forward character of Los Altos highland fruit. The brick oven roast develops caramelized agave sweetness; brick fermentation tanks expose the must to native yeasts and ambient temperature swings that add complexity. The copper alambique stills preserve more congeners and heavier agave oils than column stills, which is why this blanco tastes like cooked agave rather than neutral vodka with a tequila label.
