Siembra Valles is the lowland-Jalisco line in David Suro's Siembra Spirits portfolio — bottled at Destilería Cascahuín (NOM 1123), the Rosales family's multi-generational operation in El Arenal. Suro built Siembra Spirits to fight back against the additive-heavy, marketing-driven mainstream tequila industry, and Valles is his statement on what an agave-forward lowland blanco should actually taste like. Every bottle is additive-free (no glycerin, no sugar syrup, no caramel coloring, no oak essence — the certifications most "premium" tequila bottles quietly hide).

David Suro & Siembra Spirits

Before launching Siembra Spirits, Philadelphia-based David Suro spent decades importing tequila and running Tequilas Restaurant — long enough to watch the category lose its way under industrial-scale players. His response was to build a brand that surfaces what his favorite traditional Jalisco distilleries already do: agave farmed for maturity (8+ years), brick-oven roasting, fermentation with native yeast, double-distillation in copper pot stills, and zero additives at bottling. The Siembra portfolio splits across regional terroir — Valles for lowland (Cascahuín), Alteño for highland (La Alteña), and Ancestral for the most traditional methods (underground roasting, hand-mallet crushing).

The Cascahuín partnership

Siembra Valles is bottled at Tequila Cascahuín, S.A. (NOM 1123) — the Rosales family distillery in El Arenal, in business since 1904. The Rosales house style emphasizes lowland Jalisco character: clay-rich volcanic soils, hotter days, agave with a more savory + earthy backbone than the floral-fruit profile of highland fruit from G4 or La Alteña. Every Siembra Valles expression carries that lowland fingerprint: cooked agave forward, white pepper, mineral salinity, and an oily texture from tahona crushing on certain releases.

The lineup

  • Blanco — 80 proof, lowland-fruit fermentation in brick tanks, copper-still distillation. The everyday Suro statement bottle.
  • High Proof Blanco — same liquid, bottled at 92 proof for cocktails that need backbone without sweetness. Coats the palate; long mineral finish.
  • High Proof Tahona Blanco — bagasse fermentation + tahona-crushed agave, bottled at higher proof. The most textural Valles in the lineup.
  • Ancestral Blanco — agaves cooked in underground earthen pits, hand-mallet crushed. Pre-industrial methods; the most idiosyncratic bottle.
  • Reposado — short rest in custom American oak. Bridges the blanco's agave clarity with vanilla + caramel structure without burying the lowland character.
  • Añejo — 25+ months in American oak. Vanilla, caramel, oak structure on top of the cooked-agave base.
  • Aniversario Joven — limited release blending unaged + aged liquid for vintage-cellar nuance.

A common confusion to clear up

Suro's Siembra Valles is sometimes mislabeled online as highland tequila or attributed to the Camarena family — neither is right. NOM 1123 (Cascahuín) is a lowland distillery in El Arenal (Los Valles region, hence the brand name). The owner-operators are the Rosales family, not Camarena. The Camarenas of G4 and Tapatío are family-linked to Cascahuín through generations of Jalisco industry overlap, but they're a different family, a different distillery, a different terroir altogether.
