Volans Tequila

Volans is a small Highland Jalisco producer obsessed with two variables most tequila brands gloss over: agave maturity and water source. Their agave is harvested fully mature (8-10 years old, longer than the industry standard), and their distillation uses a blend of three water sources — rainwater, 450-foot deep well water, and spring water — with the spirit oxygenated/aerated before bottling. The result is a tequila that drinks softer, sweeter, and more aromatic than its proof would suggest.

Most commercial tequila uses agave harvested at 6 years to maximize throughput. Volans waits until 8-10 years, when the piña has accumulated denser sugars and more concentrated terroir. You can taste the difference: the Blanco doesn't need oak to feel rounded, and the aged expressions land softer on the palate than their proof points predict.
