Taiheizan Kimoto is a junmai sake brewed in Akita Prefecture using the labor-intensive kimoto method, a centuries-old technique that builds the starter culture without modern lactic acid additions and relies instead on wild ambient lactobacillus to acidify the mash. The result is a full-bodied sake with pronounced umami and an earthy, almost fungal aroma that signals depth and complexity rather than delicate florals. All Nippon Airways selected this bottle for its Premium Class service in 2023, a nod to the balance and structure that make it suitable for pairing with rich food rather than drinking in isolation. The Taiheizan brewery has operated in Akita since 1879, drawing brewing water from the Ou mountain range and milling Akita-grown sake rice in-house. The kimoto method used here—sometimes called kaden kimoto, or "traditional kimoto"—requires brewers to manually pole-mash the rice and koji starter in small tubs over several weeks, allowing wild lactic bacteria to colonize the mash and lower the pH naturally before yeast fermentation begins. Modern breweries have largely abandoned kimoto in favor of faster methods, but Taiheizan maintains the technique to preserve the layered, umami-forward profile that Akita sake is known for.
