The lotus leaves are heat-dried before fermentation, processed in a manner that draws parallels to green tea production, contributing their delicate floral character to the finished brew. At seven percent ABV, this naturally cloudy rice wine showcases a gentle effervescence and a flavor profile rooted in ingredient restraint. It earned first place at the 2014 Korea Liquors Contest, and has been served at official Cheong Wa Dae state dinners since 2009, a quiet testament to its standing among Korean traditional liquors available in Chicago. Shinpyeong Brewery was founded in 1933 and remains one of the oldest operating makgeolli producers in Korea. The multi-generational family operation is currently led by Kim Yong-se, a designated Korean liquor brewing grandmaster, alongside his son Kim Dong-gyo. The brewery operates in Dangjin, in the western region of Chungcheongnam-do, where the family sources rice locally and maintains traditional fermentation practices that honor the grain's natural character. The unfiltered yeast remains in the bottle, creating the signature cloudy appearance and carrying the active cultures that define well-made makgeolli. The White Lotus opens with floral aromas from the lotus leaves, followed by a subtle nuttiness from the rice base and a clean, refreshing finish. The carbonation is gentle, lending a soft lift without overwhelming the palate. Serve it chilled in a bowl or a short glass alongside Korean pancakes, grilled seafood, or light vegetable dishes—the floral notes play well with herbs and bright, acidic components.
