Izumibashi Sake Brewery was founded in 1857 in Ebina City, Kanagawa Prefecture, in one of the most celebrated rice-growing regions in Japan. What sets the brewery apart from nearly every other producer in the country is that they do everything themselves: they grow their own sake rice on the alluvial plains fed by the Sagami River and the mineral-rich waters of the Tanzawa mountain range, mill it on-site, and brew it in their own cellars. Most sake producers source their rice from farmers. Izumibashi begins in the fields, which gives them a level of control over quality and flavor that very few breweries can match. Their emblem is the red dragonfly, the Akatonbo, a creature that returns each autumn to hover over the rice paddies and whose presence signals a healthy, chemical-free growing environment. Reducing agricultural inputs to protect the dragonfly population is not a marketing story for Izumibashi; it is a core operating principle. The Tonbo Sparkling is a nigori-style junmai, meaning it is unfiltered and carries a portion of rice solids in suspension, giving it a soft, hazy appearance and a gentle natural sweetness. The bubbles are produced through secondary fermentation in the bottle rather than forced carbonation, resulting in a fine, delicate effervescence that feels nothing like a soda. Brewed from Yamada Nishiki rice polished to 70% and bottled at 15% ABV, it is slightly off-dry with a sake meter value of -4.0, balanced by smooth natural acidity. The nose is bright and inviting, with yellow peach, lychee, pineapple, and a whisper of yogurt-like creaminess from the rice solids. On the palate it is gentle and round, the fine bubbles lifting the subtle sweetness and making room for the acidity to keep everything clean and refreshing. The finish is soft and short, melting rather than fading. Serve it well chilled as an aperitif or alongside raw seafood, oysters, light sashimi, or carpaccio. At 250ml it is the perfect single-pour bottle for a pre-dinner moment.
