Dopff Au Moulin didn't just make Crémant d'Alsace—they essentially invented it as a commercial category. This historic Riquewihr estate began producing traditional-method sparkling wine in the early 1900s, decades before the Crémant d'Alsace appellation was formally recognized in 1976. The Furst, their flagship Brut, is a direct descendant of that pioneering vision: 100% Pinot Blanc fermented a second time in the bottle, exactly as Champagne is made, but with the distinct personality that comes from Alsace fruit. Most Crémant producers blend multiple varieties—Pinot Blanc, Auxerrois, Riesling, Pinot Gris—to build complexity. Dopff takes the opposite approach here, banking entirely on Pinot Blanc's ability to carry structure, freshness, and layered fruit on its own. It works. The wine shows a fine, persistent mousse and opens with green apple, grapefruit zest, and a bright, almost cidery lift that feels welcoming rather than austere. On the palate, you get more orchard fruit—apple, pear—alongside lemon zest and a subtle saline edge that keeps things lively. The finish is dry, clean, and slightly savory, with lingering citrus and a refreshing acidity that begs for another pour. This is a sparkling wine built for the table. It has the weight and texture to handle richer preparations—think oysters with mignonette, smoked trout, or a wedge of triple-cream cheese—but the brightness to cut through fried foods, from tempura vegetables to chicken schnitzel. It's also effortlessly drinkable on its own, the kind of bottle that works as well at a backyard gathering as it does alongside a more composed meal. For the quality and pedigree, the price remains one of the more sensible propositions in traditional-method sparkling wine. Critics consistently rank The Furst among the top Crémant d'Alsace bottlings, and it's easy to see why: this is classic technique, transparent fruit, and zero pretense, all in the same glass.
