Caldo Orlando Vásquez – The Rums of Mexico Caldo is a bold, artisanal Mexican aguardiente (cane spirit) made from fresh sugarcane juice — “caldo” literally means “broth” or “juice” in Spanish. Crafted by Orlando Vásquez, a second-generation cane farmer and first-generation distiller, this expression draws on his family’s long tradition of producing unrefined panela (piloncillo). After years of experimenting with both rehydrated panela and fresh-pressed cane juice, Orlando began distilling in 2015 using a simple four-plate continuous copper still heated by firewood. The result is a raw, characterful spirit that showcases two high-sugar cane varieties (290 and CP421) prized for their quick growth and rich flavor. Tasting Notes Nose/Palate: Earthy and complex with notes of truffle, charcoal smoke, vinegar, and wood glue. Flavor: Bright fruit emerges with mandarin, roasted cherries, and smoked berry jam. Unfiltered and full of personality, Caldo offers a smoky, funky, and surprisingly fruity profile that stands apart from more conventional rums.
