Each barrel brings a different mash bill to the final blend: one at 78% corn, 13% rye, and 9% barley aged 10.5 years; a second at 70% corn, 18% rye, and 12% barley aged 6.5 years; and a third at 65% corn, 30% rye, and 5% barley aged 4.25 years. The layered approach means the bourbon captures both the depth of older whiskey and the brightness of younger grain-forward distillate. Whiskey Trust is a Chicago-based project focused on sourcing Kentucky straight bourbon and blending it locally to balance age, mash bill diversity, and flavor. The three barrels selected for Batch 2025-01 were chosen for the way their mash bills complement one another: the 10.5-year component delivers oak and caramel maturity, the 6.5-year barrel contributes rye spice and structure, and the 4.25-year barrel—with its 30% rye content—adds peppery lift and grain sweetness. All three components are Kentucky Straight Bourbon, meaning they were distilled in Kentucky, aged in new charred oak, and meet federal standards for age and proof before blending. The blending and bottling take place in Chicago, where the final proof and balance are dialed in before the bourbon reaches the shelf. The bourbon shows layered character: caramel and vanilla from the older bourbon, black pepper and cinnamon from the high-rye younger component, and corn sweetness throughout. The mash bill variation means each sip moves through different flavor zones rather than landing on a single note.
