Alambique Serrano '3 Años' 2nd Edition is an 11-cask blend of pot still and Krassel column still rum, aged a minimum of three years in ex-bourbon barrels and new French oak. Distilled in Santa Maria Tlalixtac, Oaxaca, this single-origin rum is brought to 92.2 proof with water from the Río Blanco and represents one of the few estate sugarcane rums produced entirely at altitude in Mexico. The blend is 87% Krassel still rum aged 38 months in ex-bourbon and 13% copper alembic pot still rum aged 40 months in new French oak, both matured in an underground humid cellar with no added sugar or coloring. The Krassel family harvests organic sugarcane by hand from steep hillsides above the palenque, at elevations between 2,300 and 3,900 feet. Once transported by mule to the trapiche, the cane is milled the same day with a Campollo 9-inch mill, and the juice flows by gravity through hoses that can stretch two kilometers to the distillery. Fermentation takes place in steel and pine tanks with ambient yeast, a method that captures the microbial signature of the hillside terroir. The family moves the trapiche seasonally to follow the harvest, a practice that ties each batch to a specific parcel and moment in the agricultural calendar. The nose opens with aloe vera, watermelon agua fresca, and Madonna lily, segueing into stewed plantains, raspberry marzipan, and orange oil. On the palate, a burst of tropical fruit and lime zest gives way to watermelon and cucumber before the mid-palate brings red hots, nutmeg, and toasted almonds. The finish carries cinnamon candy and the subtle oak tannins from both barrel types.
