Rum from one of the most singular and elevated terroirs in the spirits world, Alambique Serrano's Besadiablos defies almost every expectation of where great sugarcane spirits come from. Produced from Java sugarcane harvested at over 3,000 feet above sea level in the mountains of Santa María Tlalixtac, Oaxaca, this is high-altitude rum from a region far better known for mezcal, distilled by the Krassel family, third-generation distillers who have spent years adapting both traditional and engineered techniques to the steep, mist-covered hillsides they call home. Blend 11 is a five-cask blend of pot still and Krassel still rums, the latter a specialized still design unique to the distillery. It stands as the spiritual successor to 2024's Matadiablo release, continuing a lineage of bold, architecturally complex blends. The blend notably includes 14% unaged, high-ester pot still rum, added for extra funk and complexity, a deliberate touch of rusticity amid an otherwise carefully aged spirit. The aging programme is where much of the complexity is built. The rum spent time in New French Oak, New Hungarian Oak, ex-red wine, ex-rum American Oak, and ex-bourbon American Oak casks, each contributing its own layer of flavour before the five casks were brought together. It was bottled at cask strength, 59.6% ABV, with no water, sugar, or colouring added, a transparent, full-proof expression of the blend exactly as it emerged from the casks. The producer describes the nose as showing walnuts, grilled pineapple, and dried berries, with the palate offering toasted walnuts, fruit leather, grilled pineapple, and dried pine leaves. It is, by the distillery's own description and by reputation, remarkably potent yet nimble, with dozens of layers to unpack, a rum that rewards slow, deliberate tasting.
