The extended range reflects the distillery's preference for tasting each barrel lot to determine readiness, pulling casks when the balance tips just right between raw agave sweetness and the vanilla and caramel notes that oak imparts. This is highland tequila aged with restraint, built for drinkers in Chicago and beyond who want the smoothness of a reposado without losing the vegetal clarity that defines well-made agave spirits. Campo Azul sources mature blue Weber agave from the Los Altos region of Jalisco, where the red volcanic soil and higher elevation produce agave with pronounced floral and citrus character compared to the earthier lowland fruit. The piñas are slow-roasted in traditional stone ovens to develop the cooked-agave sweetness that carries through fermentation and distillation, then double-distilled in copper pot stills to preserve aromatics. The American oak barrels used for the reposado aging are lightly charred, contributing enough tannin and spice to round the edges without masking the agave's natural brightness. The result is a tequila that reads clearly as Los Altos in origin while showing the polish that a few months in wood can deliver.
