Lagrimas Del Valle La Sabina Plata Tequila
$65.00
Lagrimas Del Valle La Sabina Plata Tequila comes from La Romita, Guanajuato, at 1760 meters elevation — a region not traditionally associated with tequila production but proving itself capable of exceptional agave. This blanco is sourced from "La Sabina," the first ranch harvested in the state of Guanajuato, where agave grows interplanted with huizache (sweet acacia) trees in dark, dry, dense soils. The drastic weather swings and high-altitude terroir mark this as one of the most distinctive unaged tequilas available in Chicago. Lagrimas Del Valle works with highland growers in non-traditional tequila regions, pushing the boundaries of what agave can express when grown outside Jalisco's established zones. La Sabina sits surrounded by mountains, where diurnal temperature shifts stress the agave and concentrate sugars differently than in valley or Los Altos production. The huizache interplanting is deliberate — those nitrogen-fixing trees improve soil health and contribute aromatic complexity that carries through fermentation and distillation. The result is a blanco that tastes nothing like the sweet, peppery profiles most drinkers expect from a plata. Bright green herbs hit first — cilantro, fresh-cut grass, mint — followed by notes of palo santo, chalk, guava, and lightly roasted parsnip. It's wildly unique, more vegetal and mineral than fruit-forward, with a texture that feels dense rather than crisp. Drink it neat to appreciate the terroir, or use it in a paloma where the grapefruit and lime amplify the herbal punch. It's the rare blanco that benefits from a few drops of water to open up the guava and acacia undertones.
