Cascina Guido Berta Moscato d'Asti DOCG is a lightly sparkling sweet wine from the steep, calcareous hillsides of Piedmont's Asti province, made from 100% Moscato Bianco grapes harvested at full ripeness and bottled with minimal intervention to preserve the varietal's distinctive floral aromatics. Unlike fully sparkling Asti Spumante, Moscato d'Asti carries lower alcohol — typically five to six percent — and gentle frizzante bubbles, a style defined by stopped fermentation that leaves residual sugar and fresh grape character intact. This is one of the few Italian DOCG wines where low alcohol and overt sweetness signal quality rather than compromise, a reflection of the zone's ancient tradition of capturing moscato at its most expressive. Cascina Guido Berta farms organically in the comune of Calosso, a village in the heart of the Moscato d'Asti production zone where southeast-facing vineyards climb slopes of limestone and marine sediment left by the Tertiary sea. The estate cold-ferments free-run juice in stainless steel to protect the grape's volatile terpenes — the compounds responsible for moscato's signature perfume of white flowers and ripe stone fruit. Fermentation is halted by chilling and filtration before the wine reaches dryness, leaving natural grape sugars and carbon dioxide in solution. The wine is bottled without fining or heavy sulfur, sealed under crown cap to maintain its delicate effervescence. Ripe aromas of sweet peach and orange blossom leap from the glass in this perfectly balanced, refreshing Moscato, with flavors that follow the nose — apricot, honeyed citrus peel, and a faint note of elderflower. The sweetness is cut by bright acidity and the prickle of fine bubbles, preventing any cloying weight on the palate. Serve well chilled as an aperitif on warm evenings in Chicago, or pair with fresh fruit tarts, panna cotta, or hazelnut biscotti at the end of a meal.
