Champagne Frédéric Savart Premier Cru "L'Ouverture"

Champagne Frédéric Savart Premier Cru "L'Ouverture" is a blanc de noirs made entirely from Pinot Noir in Écueil, a Premier Cru village in the Val de Reims about ten kilometers west of the city of Reims. The wine is a multi-vintage blend, drawing on three separate harvests to build complexity and consistency without tethering the bottling to a single year. Frédéric Savart farms four hectares across Écueil and the neighboring village of Villiers-aux-Noeuds, where sandy soils over chalk provide both aromatic lift and structural precision. Frédéric Savart runs what he calls a laboratory of terroirs, working organically and intervening minimally in both vineyard and cellar. Half of the wine ferments in neutral oak barrels, lending subtle texture and body, while the other half is raised in stainless steel to preserve the fresh, perfumed character of Pinot Noir. Fermentation is spontaneous, relying solely on native yeasts, and the wine rests on its lees for a minimum of twenty-four months before disgorgement. Dosage is kept low, typically around 3.5 grams per liter, allowing the fruit and terroir to speak without interference from residual sugar. The nose is expressive and inviting, with crunchy red apple, fragrant wild cherry, raspberry, and ripe pear, lifted by a subtle undercurrent of warm brioche and toasted pastry. On the palate the wine is medium-bodied with a fine, creamy mousse, bright and well-integrated acidity, and a clean chalky minerality that builds through the finish. It is juicy, serious, and effortlessly drinkable, rewarding both immediate pleasure and a few years of patience. Pair it with oysters, grilled white fish, poached shrimp, or a wheel of Brillat-Savarin, or simply open it as an aperitif and let it set the tone for the evening.
