Lunaria Ramoro Pet Nat Pinot Grigio is a frizzante natural sparkling wine from the Marche region of Italy, made entirely from organically farmed Pinot Grigio grapes and bottled under crown cap before primary fermentation completes. Unlike traditional Champagne-method sparklers that undergo a secondary fermentation in bottle, this pét-nat captures its effervescence from the grape's own first fermentation, resulting in a softer bubble structure and a cloudy, unfiltered appearance that signals no intervention between vineyard and glass. Lunaria has been farming certified organic and biodynamic since 2006, making them one of the Adriatic's earliest adopters of chemical-free viticulture in a region better known for Verdicchio and Montepulciano. The Ramoro bottling sources fruit from low-yielding hillside vineyards in the Offida DOCG area, where calcareous clay soils and maritime breezes from the Adriatic moderate ripening and preserve acidity even as the grapes develop full phenolic maturity. After hand-harvest, the must ferments in stainless steel with ambient yeasts, and Lunaria bottles the wine while residual sugar remains, trapping CO₂ as fermentation finishes in bottle. Extended contact with the lees—the spent yeast cells that settle at the bottom—builds texture and aromatic complexity, which is why the wine pours hazy and carries more body than a typical Pinot Grigio. No sulfur is added at bottling, a choice that keeps the wine vivid and fragile, best consumed within a year of release. The nose opens with ripe pear and strawberry, the fruit leaning toward orchard and berry rather than citrus, and the palate echoes that same profile with Honeycrisp apple and a faint almond-skin bitterness on the finish. The bubbles are gentle and creamy rather than sharp, and the wine finishes dry despite the ripe fruit character, making it versatile at the table. Serve it cold with prosciutto and burrata, grilled shrimp with lemon, or a simple margherita pizza—the salinity and the gentle carbonation cut through fat and reset the palate between bites. It also works as an aperitivo on its own, especially in warm weather when you want something with more interest than prosecco but less formality than vintage Champagne.
