Destilerías Acha "Ibar" 8-Year Basque Mountain Whisky

Destilerías Acha is one of the oldest continuously operating businesses in the Basque Country, founded in Bilbao in 1831 by Paúl Pomes, with Manuel Acha later joining to manage the distillery. In 1880 the two expanded to a larger facility in Amurrio, and after Pomes retired and sold his share, the business has remained in Acha family hands since 1886. Though the family first dreamed of making whisky back in 1926, when Martín Acha studied in Scotland, that vision lay dormant for nearly a century until it was finally realized by the current generation's Gabriel Acha in 2023. Ibar, Basque for "river valley," is built as a fresh, terroir-driven take on Scotch-style malt whisky. The blend is roughly 75% unmalted and 25% malted local barley, and rather than peat, the malted grain is smoked with fast-growing heather roots native to the Basque Country, producing a completely distinct "green-smoke" character while also making the whisky considerably more sustainable than peat-reliant styles, since peat can take millennia to form. Distillation takes place at Acha's headquarters in Álava using the historic Hervé & Moulin copper pot still, one of the oldest functioning stills in Europe, before the spirit is aged 8 years in freshly re-charred Iberian oak casks sourced from local winemakers, and finally down-proofed with pristine filtered water from the Nervión River before bottling at 40% ABV. In the glass, expect a nose of round, integrated smoke and soft leather, leading into a rich palate of sweet grains and baking spices, a genuinely unique expression shaped by Basque ingredients and landscape rather than Scottish convention.
