GlenAllachie 12 Year Old Speyside Single Malt Scotch Whisky

GlenAllachie 12 Year Old is a Speyside single malt aged exclusively in Pedro Ximénez and Oloroso sherry casks, a deliberate departure from the region's lighter, bourbon-cask style that most Speyside distilleries favor. Master distiller Billy Walker acquired the distillery in 2017 and replaced the house profile entirely, committing to sherry-forward maturation and floor maltings that give the spirit weight before the cask work even begins. The result is a malt that reads richer and darker than most twelve-year Speyside expressions, closer to a Highland profile in body but retaining the orchard-fruit sweetness the region is known for. GlenAllachie sits in the heart of Speyside near Aberlour, drawing water from the Ben Rinnes springs. The distillery was built in 1967 as a blending workhorse for Chivas and Ballantine's, but Walker's arrival shifted the focus to single-malt expression with European oak as the primary maturation vessel. The 12 Year is aged entirely in first-fill Pedro Ximénez and Oloroso hogsheads sourced from Jerez, which explains the polished bronze color and the caramelized sugar character that runs through the spirit. The casks are hand-selected and the whisky is bottled at 46% without chill filtration, preserving texture and mouthfeel that lighter filtration would strip away. The nose leads with butterscotch and wildflower honey, followed by dark raisins and a background note of mocha that suggests the PX influence. On the palate, honey and marzipan layer over ripe banana, with waves of butterscotch, golden raisins, and that same delicate mocha note threading through the finish. The texture is oily and coating, a hallmark of non-chill-filtered Scotch, and the 46% proof carries the sweetness without turning cloying. This is a malt for after dinner, alongside dark chocolate or a cheese plate with aged Manchego and marcona almonds, or on its own with a square of nougat to mirror the honeyed core.
