Far North Sölveig Gin

Far North Sölveig Gin is a field-to-bottle spirit distilled in Hallock, Minnesota, from estate-grown rye, winter wheat, and corn that never leave the distillery's 700-acre farm. The distillery malts and mills its own grain, ferments with house yeast, and distills in a custom column still before a final pass through a copper pot still with twelve botanicals. Named for a character in Norse mythology, Sölveig represents the northernmost grain-to-glass distillery in the contiguous United States and one of the few American gins built on a 100% estate grain bill. Far North Spirits was founded by the Swanson family—Cheri, Michael, and their son Derek—who transitioned a fifth-generation grain farm into a certified organic distillery in 2007. The farm sits in the Red River Valley, a former glacial lakebed with deep black soil and a short, intense growing season that produces high-protein grain. Every bottle of Sölveig Gin contains rye and wheat harvested, malted, milled, fermented, and distilled on the same property, a closed-loop system that gives the distillery control over every input. The botanical blend includes juniper, coriander, cardamom, lemon peel, orange peel, cassia, angelica root, orris root, lavender, thyme, black pepper, and licorice root, all steeped in the grain base before the final distillation. The gin opens with bright citrus and pine, a hint of lavender threading through the top notes. The palate is creamy but light, with thyme and coriander building in the mid-palate as the spirit opens in the glass. After twenty-four hours of air, the complexity deepens—black olive and fresh grain notes appear on the finish, which is cool, persistent, and almost savory. Sölveig Gin works in a martini with a lemon twist or in a Negroni where the grain backbone stands up to Campari. It also pairs well with cured fish, soft cheeses, and dishes built on herbs and citrus.
