Single-cask rum named for the Psarocolius montezuma — the loud-calling oropendola whose voice carries over the canopy above the Krassel family's cane fields. Java-varietal cane juice, ambient-yeast pine-tank ferment, Krassel-still distillation. Aged 28 months in a Mexican rum cask (American oak) and finished 9 months in a jackfruit cask. Nose: cherry cough drop, pipe tobacco, dental floss, green mango skin, mothballs. Palate: clay and wet soil, cherries, Angostura, and a spiced vanilla finish.
