Clairin Sonson 53%

Distilled by Sonson Vaval in Saint-Michel-de-l'Attalaye, deep in Haiti's Artibonite Valley, this is agricultural rum in its most unvarnished form. Fresh cane juice — no molasses, no syrup — from locally grown Cristalline cane, pressed and left to ferment spontaneously with nothing but wild yeast, native water, and time. Distillation happens in a small direct-fire pot still, and what comes off it goes straight into the bottle: unaged, unsweetened, unfiltered, undiluted. The result is loud and alive. Green olive brine and grassy cane sap up front, then a swerve into overripe banana, black pepper, and something faintly medicinal — herbs, wet clay, a whisper of smoke from the fire below the still. The 53.4% ABV carries it all without ever feeling hot, finishing long, saline, and dry.
