This is Highlands agave laid bare, produced by the Vivanco family distillery under the direction of Master Distiller Sergio Cruz and sold through a handful of independent shops including Off Premise Chicago in Lincoln Park. Lost Lore Tequila sources 100% Tequilana Weber blue agave from the Los Altos highlands, where the red volcanic soil and higher elevation yield fruit with brighter acidity and more pronounced floral character than lowland agave. The piñas are cooked in traditional stone and brick ovens, then crushed and fermented in open-air tanks with agave fibers still present, using champagne yeast to encourage complexity. Fermentation is fed by deep-well water, and the wash is twice distilled in copper pot stills. The Vivanco family has operated NOM 1414 for decades, and this project reflects their commitment to transparent, fiber-forward fermentation and minimal intervention. The nose opens with bright citrus — lime zest and grapefruit pith — followed by cooked pineapple, white pepper, and a faint minerality that reads almost saline on the finish.
