Blend named for the tepejilote palm (Nahuatl for "mountain corn"), which grows near the family's cane mill sites at ~3,000 feet in Santa María Tlalixtac. Java-varietal cane juice, ambient-yeast pine-tank ferment, alembic pot-still distillation. Two-part blend: 46 months total — 33 in new French oak then 13 in an ex-red-wine Hungarian oak cask; plus 35 months in a Mexican fortified-wine cask (American oak). Nose: eggnog, oat bran, cinnamon roll, caramelized butter on slightly burnt toast. Palate: silky, oily, with nutmeg giving way to soy sauce, anisette, and red hots.
