Nikka Coffey Gin is distilled at the Miyagikyo Distillery outside Sendai, Japan, using the same continuous Coffey stills that built Nikka's whisky reputation—a rare choice for gin that yields a creamier, fuller body than copper pot stills. The base spirit is corn and malted barley, distilled in a three-still system, then infused with eleven botanicals selected by Nikka's blending team. Four of those eleven are Japanese citrus varieties—yuzu, kabosu, amanatsu, and shequasar—that set this gin apart from London Dry templates popular in Chicago and anchor it in the northern Honshu landscape where Miyagikyo sits. Nikka founder Masataka Taketsuru chose Miyagikyo in 1969 for its soft water and clean mountain air, originally to produce malt whisky in the Scottish tradition he learned at Longmorn and Hazelburn. The distillery added Coffey stills in the 1990s, column stills invented by Aeneas Coffey in 1830 that allow continuous distillation and preserve more grain character than batch pot stills. For Nikka Coffey Gin, the eleven botanicals—juniper, coriander, angelica root, lemon peel, orange peel, the four Japanese citrus, sansho pepper, and apple—are divided into three separate distillate streams, then blended for balance rather than distilled together in a single basket. This modular approach gives the blenders control over each botanical's intensity and lets the Japanese citrus sit forward without overwhelming the juniper backbone. The palate opens with juniper and coriander, then moves quickly to bright yuzu and kabosu peel, a floral sweetness from apple distillate, and a prickly sansho pepper finish that reads almost like Sichuan peppercorn. The Coffey still base adds a roundness that smooths out the citrus edges—this is a gin that works in a 2:1 gin martini or a classic gimlet with fresh lime, but it also holds up in a highball with tonic and soda, a serve Nikka calls the Sonic that lets the Japanese citrus shine without drowning in quinine. Pair it with grilled fish, oysters, or anything with ponzu; the sansho pepper bridges the gap between botanical gin and umami.
