Sajous Clairin represents Haitian rum at its most elemental: nothing added, nothing removed, and certainly nothing industrialized. This expression comes from Faubert Casimir's distillery in Saint-Michel de l'Attalaye, in Haiti's Central Plateau, where every step from harvest to distillation follows methods that predate industrial agriculture by centuries. The cane itself is native Haitian varietals, grown without herbicides or pesticides, cut by hand, and hauled to the distillery by ox cart and donkey. It's not a romantic affectation. It's simply how it's done. Fermentation happens spontaneously with wild yeasts, giving each batch a distinct microbial signature tied to that specific harvest and location. Casimir distills on a batch pot still fitted with a five to six plate column, a hybrid setup that strips out just enough impulsion while preserving the grassy, vegetal intensity that defines clairin. The spirit comes off the still between 45 and 56 percent ABV and goes into the bottle at 108.6 proof without aging, filtration, or dilution beyond proofing. What you get in the glass is raw, funky, and alive. Expect aromas of fresh-cut sugarcane, green banana, overripe pineapple, and a briny, almost olive-like salinity. On the palate, it's lean and explosive, with white pepper, lime zest, wet stone, and a grassy heat that builds without turning harsh. The finish is long and slightly medicinal, with hints of anise and eucalyptus. This isn't sipping rum in the traditional sense. It's agricultural firewater with structure and purpose. Clairin excels in cocktails that can handle its intensity. Try it in a Ti' Punch with cane syrup and lime, or split it with aged rum in a Daiquiri for depth and bite.
